2018-2019 VAND Board of Directors

President: Mary Olshefski, MS, RDN, LD, CSSD

Mary earned her Bachelor of Science degree in Food and Nutrition at Florida State University. Mary attended the University of Kansas Medical Center in Kansas City where she completed her internship in clinical dietetics and earned her Master of Science degree in clinical nutrition. Mary began her career as a clinical dietitian for St Joseph’s Hospital in Carbondale, Pa. Shortly after that she moved to Daytona Beach to work full time at Halifax Medical Center as their Health Fitness Dietitian. Mary worked in this position for 9.5 years and her duties included providing nutrition counseling services for outpatients, fitness center members, and athletes. Other major responsibilities included nutrition counseling for all cardiac and pulmonary rehabilitation patients. Mary began the HMR weight management program at HMC and has helped many patients successfully lose over 100 pounds. On behalf of the hospital, Mary did a lot public speaking for community and patient groups and appeared on local news shows and local ratio programs.  In the early 90’s, HMC partnered with Human Performance International, a company focused on fine tuning the psychological and physical performance of professional race car drivers. Mary was added to their staff part time to be their dietitian. This experience provided Mary the opportunity to up her game and use her sports nutrition skills to counsel close to 100 drivers/athletes at the professional level.  For the last 21 years, Mary has been the lead nutrition professor and sports dietitian in the Department of Health, Wellness, and Athletics at Daytona State College.  Mary is a Board Certified Specialist in Sports Dietetics, a member of the Academy, SCAN, and CPSDA. Mary has served on the Board of Directors for the Volusia Academy of Dietetics as their secretary for 3 years.  Mary wrote the bylaws for VAND, developed the VAND website, and continues to function as its webmaster. Mary lives in Ponce Inlet with her husband Neil and their chocolate Labrador, Riley.  She enjoys yoga, fishing, boating, scuba diving, and paddle boarding.

President-Elect: Christine Oman, MS, RD, LD

Christine’s interest in food and nutrition began as a girl while growing up on a farm and taking 4-H livestock and cooking projects to the county fair. She earned her bachelor’s and master’s degrees in nutrition from Case Western Reserve University and completed her Dietetic Internship at University Hospitals Case Medical Center in Cleveland, Ohio. Her graduate research was done at the Louis Stokes VA Medical Center and examined the relationship between depression and insulin resistance. In 2013 Christine moved to Florida to pursue her career. She has worked in the long term care and acute care settings and currently stays home to care for her family. Christine has served VAND as the National Nutrition Month committee chair in 2015-2016, the nominating chair in 2016-2017, the membership chair in 2017-2018 and also helps to manage the VAND website and email.

Secretary: April Kelton, MS RDN, LDN

April earned her Bachelor of Science degree in Dietetics at Framingham State University. Shortly after graduation April moved to Florida to work at Walt Disney World for the next ten years seasonally. In 2010, she moved to DeLand, and has called it home ever since. For over four years, she worked for Volusia County Head Start as a Nutrition Coordinator. As the Nutrition Coordinator, she provided, nutrition counseling, trainings and managed the food service program. In 2012 April began her clinical career as a Registered Dietetic Technician at Nemours Children’s Hospital in Orlando. Her many duties included inpatient clinic care such as diet educations, formula instructions, and overseeing daily operations of the formula room. Additionally, she taught a monthly nutrition class in the Nemours Kitchen that was open to the community. While at Nemours she became a Certified Lactation Counselor, which helped support the need for inpatient lactation consults and services. Last year, April completed a Master’s degrees in Nutrition with Distance Learning Internship at Keiser University. She still remains employed at Nemours Children’s Hospital as a Clinical Registered Dietitian in Research for type 1 diabetes management. April considers it her passion working with children and their families.

Treasurer: Kim Koevenig, RDN, LDN, CDE

Kim has worked at Halifax Health Medical Center for 28 years. She is a certified diabetes educator and has been the hospital’s Diabetes Education Coordinator and dietitian for the past 11 years. Kim’s other positions at Halifax Health have included Weight Management/Medical Nutrition Therapy Coordinator, Health Fitness dietitian and Inpatient Clinical Dietitian (specializing in diabetes). Kim earned a BS degree in Nutrition and Food Science from Florida State University and completed a dietetic internship at the University of Iowa Hospitals and Clinics. In considering Kim as treasurer, Kim has had to manage money in her two supervisory positions. Currently she manages a $200,800 department budget. She also has completed the Dave Ramsey “Financial Peace University” course (on managing personal finances). Kim’s service to VAND has also included making our beautiful silent auction basket for Florida FANS 2016.

Nominating Committee Chair: Shawna Jenkins, MS

Shawna Jenkins is a recent graduate from the University of North Florida’s (UNF) Master of Science in Nutrition and Dietetics program, where she also earned a bachelor’s degree. She received her first bachelor’s degree from the Florida State University and easily obtained an immense love for football and everything Seminoles. She completed her Dietetic Internship (DI) through UNF’s ISPP distance program. She recently completed her DI and is currently studying to earn her credentials to have the opportunity to work alongside some of the best dietitians in the area. She is ready to pursue a position in the hospital inpatient setting and looks forward to developing a strong clinical skillset and knowledge base. Shawna is an active member of the Academy of Nutrition and Dietetics and is part of the Florida Academy of Nutrition and Dietetics. Shawna currently works as a server in a local restaurant. In her spare time, she surrounds herself by her amazing niece and nephew, and spends her time with family, friends, and good books.
